Cobbler


Granny Booker’s 3 cup cobbler
Granny (referred to as Aunt Marjorie in Butch’s recipe which follows) was the person who started me cooking.  This recipe is as easy as it can be and makes a really great pie.  I cheat and use less sugar, since I like it a bit less sweet and suspect that the recipe would call for less if it weren’t so symmetrical to have 1 cup of all the main ingredients.
   Put a stick of butter in a deep cake pan or a bread loaf pan.  Put it in the oven at 375.  While it’s melting, mix together a cup of self-rising flour, then a cup of sugar, then a cup of milk and a teaspoon of almond extract (or vanilla in an emergency).  Pour the mixture into the melted butter.  Stir only once. Add a can of sliced peaches complete with juice.  Do not stir at all.  Cook for about 40 minutes, until the crust is brown.  Serve with vanilla ice cream. 

If you don't have self-rising flour, add your own salt and baking powder to the flour you do have.
